Well, here goes my first set of instructions for a lovely dinner. The meal is chicken divan, sauteed green beans, and grilled corn. I cannot tell you how easy, delicious, and nutritious this meal is. I have served it several times to guests and they are begging for more. Two of my most recent consumers include my precious boyfriend, Billy and my sister's boyfriend, Scott.
Divine Divan:
2 chicken breasts cooked and chopped
1 can cream of chicken soup
juice of one lemon
1 package of Steamfresh frozen broccoli cooked in the microwave
1/4 c. light sour cream
1 tsp each of kosher salt and pepper-or to your preference
1/2 cup cheddar cheese
Ritz crackers
Directions:
1. Mix chopped chicken, soup, lemon juice, sour cream, salt, pepper in a bowl-you can allow this to sit and marinate for a few minutes while you prep the vegetables
2. Cook broccoli according to package directions
3. Drain excess water off of broccoli and add to mixture along with cheese
4. Mix well
5. Place in casserole dish-DON'T FORGET THE COOKING SPRAY
6. Top casserole with crumbled Ritz crackers
7. Bake at 350 until bubbling and brown
Sauteed Green Beans:
Fresh green beans in vegetable section or in Green Giant bag (where lettuce bags are)-usually two to three large handfulls makes enough for four people
Chopped garlic-I use the Spice World in the glass jar
Olive Oil-extra virgin
kosher salt and pepper to taste
Directions:
1. Place about 2 tbsp. of olive oil in a skillet and turn on medium high heat
2. When oil is warm, add washed green beans
3. Sautee to your desired "crunchiness"
4. add garlic, salt, and pepper to taste
5. I sometimes cook these on the flattop grill as image shows
Grilled Corn:
4-6 halves of fresh corn (Available at Sam's in vegetable section or you can thaw out frozen)
olive oil
kosher salt
mixed peppercorn grinder (McCormick)
Directions:
1. Rub corn with olive oil, salt, and pepper-all to your liking but I make sure to coat mine well with all three
2. Heat skillet, flattop grill, or regular grill (with foil on top) to medium high heat
3. Place corn on cooking device and allow to "grill" (brown) for about two minutes on each side-I like mine cooked a little more so cook to your preference
